Here is a quick, easy and nutritious recipe from our friend German Lam over at Glam Foods. Be sure to come by Healthworks Chestnut Hill on Monday July 6th for a live cooking demonstration with Chef Lam!
This dish is so easy to make it really is a good one. It can be used as a side our a main dish. Try adding some grilled chicken if you use it as a main course!
If you are not familiar with Quinoa here is some fun information:
Although not a common item in most kitchens today, quinoa is an amino acid-rich (protein) seed that has a fluffy, creamy, slightly crunchy texture and a somewhat nutty flavor when cooked. Quinoa is available in your local health food stores throughout the year.
Most commonly considered a grain, quinoa is actually a relative of leafy green vegetables like spinach and Swiss chard. It is a recently rediscovered ancient “grain” once considered “the gold of the Incas.”
Quinoa with Dried Cranberries, Spanish Almonds and Mint
Serves 6
1 cup quinoa
1 cup dried cranberries
1 cup Spanish almonds
1 bunch fresh mint
To Taste Ground Star Anise
2 oz grape seed oil
Methods
- Boil the Quinoa in water until cooked (follow instructions on package for cooking). Remove from heat and reserve.
- Sauté the cranberries and Spanish almonds in grape seed oil. Add the cooked quinoa and mint and serve. Add ground Anise to taste.

Oldways Table

Hi Alison,
I’m glad that you tried and enjoyed the recipe. Sorry for the confusing terms, here is some clarification:
Saute: Heat the grape seed oil in a pan and then add the almonds and cranberries. Keep them moving constantly so that they do not burn. The idea here is to “caramelize” and give them a little color, it will add a more intense flavor and warm them up. Bourdain will be impressed when he here’s you use a word like caramelize!
Bunch of Mint: When you buy fresh herbs, they usually come in bunches. That’s a bunch. It is a pretty vague term, so basically add as much or as little of the bunch that you want, whatever tastes good to you.
To Taste: This is similar to the bunch. Just add as much as you think tastes good. Star Anise can be pretty strong so start light and add a little more if you think it would be better. Salt and Pepper are often ingredients that are listed as “add to taste.”
