Even though sweet potatoes may be part of the Thanksgiving dinner tradition, these naturally sweet vegetables can be added to your meals throughout the year. Sweet potatoes are nutritional all-stars; one of the best vegetables you can eat! They’re loaded with carotenoids, vitamin C, potassium, and fiber. A simple and delicious way to incorporate sweet potatoes into your diet is sweet potato fries!

 

Sweet Potato Fries

 

Makes 2-3 servings

 

Ingredients:

 

2 small sweet potatoes

1 tsp olive oil

1/2 tsp cinnamon

1/4 tsp paprika

 

Directions:

 

o Preheat oven to 425*F.

o Chop sweet potatoes into “fries.”

o In a plastic Ziplock bag, add sweet potato fries, olive oil, cinnamon, and paprika.

o Seal the bag and shake thoroughly to coat sweet potato fries.

o Spread the fries onto a baking sheet covered in tin foil.

o Bake for 25-30 minutes, turning fries every 10 minutes or so.

 

Allow to cool for about 5 minutes and serve warm.*

 

*Baked sweet potato fries are also delicious when served cold, so they make a great food to pack in to-go lunches!
